Ozoni soup (Japanese New Year Soup)

Serves 4

Part A
Water 5 cups
Sake 1/3 cup
Hon dashi 1 1/2 tbsp
Salt 1 tsp
Soy sauce 1 tsp

Part B
Mochi 4 pc
Kamaboko 8 pc
Shiitake mushroom 4 pc
Carrot 4 pc
Takanoko 4 pc
Green onion 4 bunches
Chicken 12 oz cut into 12 1 oz pieces
Snow pea 4 pc

Place 5 cups of water into a medium size stock
pot. Add chicken and place on medium high heat.  Then add sake, hon dashi, salt and soy sauce. Bring to a boil.

Place a small fry pan on the stove on medium heat. Place 4 pieces of Mochi onto the fry pan and cover. As your Mochi cooks you want it to burn slightly. Mochi will puff up when cooking. Set aside.

Add kamaboko, shiitake, carrot, takanoko & snow peas to your soup, be careful not to over cook as these ingredients only need to be warmed up.

Cut your green onion on the bias as decoration for each bowl.

For Japanese New Year each bowl will need to be prepared separate before serving. Make sure all guests get a bit of vegetables to make each bowl complete.
