Your Life A to Z Recipe: Tuesday, November 11th, 2014: Caprese Kabobs, Bruschetta, and Cucumber Yogurt Salad

Caprese kabobs

Ingredients: 

  • Cherub tomatoes
  • Mozzarella cheese cubed
  • Black or green pitted olives
  • Fresh basil leaves

To Make: 

On small kabob stick, put one cherub tomato, one fresh mozzarella cube, and one black or green pitted olive. Add basil leaves in between layers. Eat all at once. 


Bruschetta

Ingredients:

  • Three Roma tomatoes
  • Fresh basil
  • Salt and pepper
  • Chopped fresh garlic
  • Balsamic vinegar and/or olive oil

To Make: 

Chop three Roma tomatoes

Add fresh basil, salt, pepper

Optional, add chopped fresh garlic and/or balsamic vinegar and/or olive oil. Enjoy on bread or crackers. 


Cucumber yogurt salad

Chop 1 hothouse cucumber in cubes and put in bowl

Add 1 cup plain Greek yogurt

Salt, pepper, and cumin to taste
