Dollar Store Dishes: Beer Battered Scallops

PHOENIX -- 3TV's Kaley O'Kelly issued a challenge to some of the best chefs in the Valley to not only shop at Dollar Tree, but also to come up with a gourmet meal with the ingredients they find there.

Yes, you can find delicious ingredients to create out-of-this-world meals on a budget.

We have one more fabulous dinner for you.

Ingredients & Instructions
1 can of beer
1 full bag of Larry the Cable Guy Batter
4 packs of scallops
2 cups vegetable oil

Directions
Mix bag with 1 can of beer.

Coat seasoned scallops.

Fry in oil for 3 minutes on each side at 375 degrees.  

Crème Fresh Sauce
1 cup crème fresh
1 tbsp guajillo pepper
1 tbsp arbol chiles
1 tbsp jalepeno
2 tbsp ro*tel
½ tsp cumin
a pinch of salt and pepper

Heat crème fresh over medium heat.

Add minced guajillo pepper, arbol chili, jalepeno, ro*tel and cumin. Season with salt and pepper.

Reduce for 5 minutes on medium heat.

Uncle Bens Mexican Rice
1-1/3 cup Water
½ cup Rice
½ cup ro*tel
2 tbsp jalepeno

Combine rice, water and butter (optional) in a saucepan.

Bring to a boil. Reduce heat to medium or medium-low, and simmer covered 20 minutes.

Remove from heat. Let stand covered 5 minutes or until water is absorbed. Fluff with fork and serve. Add 2 tbsp jalapeño and ro*tel.

Refried Beans
4 cups water
2 cups beans
2 tbsp vegetable margarine
1 pinch salt and pepper

Soak beans in 2x water by volume in refrigerator for 23 hours.

Mash beans with margarine and salt and pepper.

Heat on medium for 5 minutes.
