Dollar Store Dishes: Mango Coconut Rice Pudding

PHOENIX -- 3TV's Kaley O'Kelly issued a challenge to some of the best chefs in the Valley to not only shop at Dollar Tree, but also to come up with a gourmet meal with the ingredients they find there.

Yes, you can find delicious ingredients to create out-of-this-world meals on a budget.

Every great meal should be capped off with an equally great dessert.

1 cup jasmine rice
2 1/4 cup water
1 can evaporated milk
1 cup sugar
2 eggs, separated
1 tsp vanilla
2 Tbs corn starch
1 can sliced mango, drained and chopped
1 cup sweetened coconut
4 oz sliced almonds

Preheat oven to 350

Cook rice and water in medium sized, covered pot. Bring to boil over medium heat and reduce to simmer, then boil 15 minutes or until tender.

While rice is cooking, put almonds and coconut on a sheet pan and bake on 350 for 3-6 minutes until toasted.

When rice is done remove from heat and stir in sugar, milk, 2 egg yolks, vanilla, and corn starch. Return to medium heat stirring often until a boils is reached. Cook for a few more minutes or until thickened, stirring constantly.

Remove from heat and stir in mango and half of the toasted coconut.

Whip the egg whites until soft peaks form and then gently fold into rice pudding. Top with almonds and the rest of the coconut and serve warm or chill.

Keeps for 4-5 days covered in the fridge.
