AIMS Replacement Test
The Arizona Board of Education on Monday is scheduled to consider selecting a new test for assessing whether public school students' learning satisfies state standards. The board will hold a special meeting to consider recommendations of a procurement official, including authorizing the official to award a contract. Students are supposed to start taking a new test next spring. It would replace the current Arizona Instrument to Measure Standards, or AIMS. The high school graduating class of 2016 is the last that will be required by the state to pass AIMS before graduation. Six organizations responded earlier this year to a state request for information on assessment options. The state later sought formal proposals.

Halloween Candy Leftovers
If you've got kids, you've probably got piles of Halloween candy left-over. What to do with it all? You can actually cook with it, and whip up a recipe.... We're with Lucia Schnitzer of Luci's Healthy Marketplace... she's got some ideas for mixing Halloween candy and everyday food. Want to keep it healthy? She offers tips on better chocolates you can use in the same recipes, for a healthier twist.
Peanut Butter Chocolate Parfait Recipe:
2 Taza Dominican 70% Dark Stone Ground Bars, chopped (Use Hershey, Nestle, Snickers or Payday as substitutes)
1/2 cup cream
1. Combine chocolate and cream in a small saucepan and place over low heat, stirring often
until melted. Keep warm until ready to use.
Peanut Butter Layer:
1/2 cup peanut butter
2 oz cream cheese
1/4 cup sugar (NO sugar if using sweet chocolate)
2 tablespoons milk
pinch of salt
1. In a bowl mix together peanut butter, cream cheese, sugar, milk, and pinch of salt until
4- six ounce jars
2 small peanut bars
2 cup crushed oatmeal cookies
Chocolate Covered Nibs, for garnish
1. Divide half the crushed cookies between the jars, top with half the peanut butter mixture,
and half the chocolate. Repeat with remaining ingredients and top with Chocolate Covered
Nibs. (Use Reese's or M&M as Halloween candy substitute for toppings)
These parfaits can be assembled a day (or even two) in advance.
Chocolate and Cheese Panini
Challah or Sandwich bread
3-4 ounces of brie (or ricotta or mascarpone)
Dark chocolate, Milk chocolate or Semi-Sweet Chocolate (Substitute in Hershey’s Nestle, Snickers, Payday or Kit Kat if you have leftover Halloween candy)
Strawberries (or favorite fruit or preserves)
1. Butter the outside slices of bread for your sandwich. Lay on cutting board, buttered
slices facing down.
2. Layer slices of brie, chunks of chocolate, and strawberries on the non-buttered sides
of the bread and close the sandwich, buttered slices facing out.
3. Place sandwich, buttered side down, onto a pan over medium low heat. Flip over when
one side is toasted and repeat with the other side.
4. Cook until cheese and chocolate are melted and then serve immediately.
