Dollar Store Dishes: Tortilla Crusted Tilapia on a Tomato Fideo topped with a Black Bean and Corn Salsa

PHOENIX -- 3TV's Kaley O'Kelly issued a challenge to some of the best chefs in the Valley to not only shop at Dollar Tree, but also to come up with a gourmet meal with the ingredients they find there.

Yes, you can find delicious ingredients to create out-of-this-world meals on a budget.

Today it's all about a "dollar store gourmet" dinner for two!

For the fish:
4 oz Tilapia
2 eggs, beaten
8 oz Lime flavored tortilla chips, crumbled fine
2 oz olive oil
Place fish filet in eggs, coating well.  Place in crumbled tortilla chips, pressing down to adhere to fish.

Heat olive oil in Teflon sauté pan over medium high heat, place fish in oil and fry to golden brown about 1 1/2 to 2 minutes on each side.  When fish is done place on paper towel to drain any excess oil.
For fideo (Spanish for noodle):
4 oz thin spaghetti
8 oz chicken broth
1 oz olive oil
1 tsp chopped fresh garlic
1/2 cup tomato sauce
1/8 cup rotelle tomatoes with green chilies
1/2 tsp ground cumin
salt and pepper to taste
Place chicken broth over high heat until a rapid boil is achieved, then place pasta in broth to cook, 5-6 minutes. Drain pasta but do not rinse.

Over medium-high heat place olive oil in sauté pan, add garlic, tomato sauce, rotelle tomatoes. and cumin. When a rapid boil is achieved lower heat to simmer and add cooked pasta, then season with salt and pepper to taste.
For Black Bean and Corn Salsa:
1/2 cup black beans drained and rinsed
1/2 cup corn, rinsed
1 tbl chopped jalepeno
1/4 tsp cumin
1 tbl jalepeno juice from can
salt and pepper to taste
