Barrio Queen's Choco Flan

Flan is a beloved Latin dessert and at Barrio Queen in downtown Scottsdale. Their version adds chocolate cake, chocolate sauce and Kahlua.

The restaurant has partnered with Yelp and St. Mary's Food Bank to raise money. For a $3 donation you add to your bill, you get a free choco-flan, it's called Yelp's Check in For Children.

Yelp is partnering with Barrio Queen during the month of October for Yelp's Check in For Children, raising money for St. Mary's Food Bank. To participate in the program, guests can "check in" via the Yelp app on their mobile phone and ask their server to add a $3 donation to St. Mary's Food Bank to their bill.  Once they do, Barrio Queen will provide them with a free Choco Flan, one of the restaurant's most popular desserts.

To participate, simply check in on your mobile Yelp app and show your server. Let your server know you'd like to make a $3 donation for Yelp's Check in For Children and your server will add it to your bill. Barrio Queen will reward you with a sweet Choco Flan for your generosity.

Customers who do not have a Yelp account can still participate - just let your server know you'd like to make the $3 donation to the Yelp Check in For Children and your server can add the donation to your bill and you can still receive the free dessert.

Barrio Queen's Choco Flan Recipe:

3 Parts
Part 1 - FLAN-CUSTARD MIX (can be reduced for smaller quantities)

Yield- 12 ea. 5 oz Portions (60 Ounces)
Prep Time- Approx.  10 mins

Ingredients:
10 ea Large, Cracked Fresh Eggs
2 ea 12 Oz. Cans Evaporated Milk
2 ea 14 Oz. Cans Sweetened  Condensed Milk
1/8 Cup Vanilla Extract

Method:
Whisk together in mixer with whisk attachment until fully incorporated.

Step 2 - CARAMEL

Yield- 1/2 Cup
Prep Time- Approx. 20 mins

Ingredients:
1/2 Cup Sugar

Method:
Heat sugar in small saucepan over medium to high heat stirring evenly to allow it to cook and melt.
Ready once it turns a dark brown caramel color, not burnt and do not allow it to crystallize or the sugar will separate. (NOTE-KEEP WARM TO STAY SOFT AND ALLOW TO POUR INTO TINS)

Step 3 - CHOCOLATE TOPPING
Ingredients:
1 Box-Store Bought Chocolate Cake Mix
Prepare raw batter per box instructions and set aside.

Assembly

BARRIO QUEEN--BAKED  CHOCOFLAN
Yield- 12 Flan
Total Prep and Baking Time- Approx. 2 hours

Ingredients:
12 each Foil Containers or Ceramic Oven Safe Soup Cups (5-8 ounces okay)
Caramel
Flan Custard
Chocolate Cake Batter (Store Box Brand Is Fine)
Water For Baking Pan

CHOCOFLAN BAKING and ASSEMBLY
Drizzle 1 Tablespoon of Caramel into each ceramic soup container or foil tin. Let it sit for 5 minutes to harden.

Then pour  2 Oz of flan custard on top of the caramel.

Then pour  3 Oz of the Chocolate Cake Batter on top of flan custard mix leaving about 2/3 left, as cake will rise.

Take chocoflan cups and place on a large baking sheet or sheetpan with high sides. Place and spread out evenly. Add 1 pint of water to the pan to allow the flan to cook or poach evenly without burning.

Bake at 300 Degrees for 1 ½ hours. MUST TURN THE PANS WHILE BAKING EACH 30 Minutes!!.

Stick with toothpick. They are done when toothpick comes out clean.

Let cool at room temperature for about 40 minutes. Then place in refrigerator to chill completely through.

Plating

Once cooled, take a sharp knife and cut around the baked flan tin, making sure to release the flan at the bottom so it will come out of the tin. Invert the tin onto a chilled plate and pouring the caramel sauce that was in the bottom of the tin to run out and spread evenly over the chocoflan. Garnish to your liking with roasted pecans, fruit compote, whipped cream, etc. Enjoy the Barrio Queen way-Share with friends and family!
