Oct. 15 is National Mushroom Day, a day honoring the fungi that has over 14,000 different varieties.
"Mushrooms are just great all around. The health benefits are just ridiculous," said Jayson Gonzales of Mellow Mushroom. "Mushrooms are the perfect addition to any dish."
Gonzales shared how to prepare the restaurant's popular Stuffed Portobello Mushroom dish.
The dish starts with a portobello mushroom cap cooked for six to eight minutes in the oven. Then, the mushroom is stuffed with artichoke hearts, feta cheese, sun-dried tomatoes, spinach and mozzarella.
The dish is then baked for two to three minutes and drizzled with a balsamic glaze. It's then served on a bed of spring mix tossed with an herb vinaigrette dressing.
