Chef Dad's Pork Tenderloin Sandwich

INGREDIENTS:
1 lb. Center Cut & Butterflied Pork Chops (about 4-6 oz. ea. - tenderized*)
4 Eggs
2 Cups All Purpose Flour
4 Cups Bread Crumbs (Italian Seasoned or Panko)
1 Qt. Corn or Vegetable Oil (plus 1 Tbsp. Butter)
4 Soft Hamburger Buns
Mayo, Pickles, Lettuce, Tomato, Yellow Mustard (whichever you prefer)
Salt & Pepper

This recipe makes 4 sandwiches.

COOKING:
1)    Put your eggs in a bowl the beat them well.  Set aside.  Put your flour in a large zipper bag and set aside.  Put your bread crumbs in a small square or rectangular dish and set that aside.  Line them up from left to right - flour, egg, bread crumbs.  Have a large flat plate or baking pan lined with wax paper ready.
2)    Season your pork with kosher salt & fresh cracked pepper on both sides. Gently press the seasonings into the meat.  Move the meat, one or two at a time into the zipper bag with the flour and close it up keep lots of air in there.  Shake the bag well to coat the meat with flour.  Open the bag and lightly shake off the excess flour then dip the meat into the egg.  Move the wet meat into the bread crumbs and coat well.  Place the breaded pork on the wax paper and repeat until done.  Cover your meat with foil and refrigerate until you're ready to cook.
3)    Get a large frying pan over medium high heat with about 1 ½ cups of vegetable or corn oil in it.  Once the oil hits 350-360 degrees, cook the pork for about 2 minutes then flip for another 2 minutes.  Check to make sure it's cooked all the way through.

Cook's Notes: *Most supermarkets offer a free "meat tenderizing" service.  Call the butchers department just to be sure. If you are buying center cut pork chops that are about 1" thick, have them run it through the tenderizer 3 times.  If it's a thinner butterflied cut, two runs through the tenderizer should be fine.  Make sure you buy boneless cuts of meat because the bones cannot be put through the tenderizer.

"Orchids in Art" Show & Sale Set for Oct. 18 & 19 at Arizona State Veteran Home in Phoenix

Orchid Society of Arizona's 52nd annual show and sale to feature hundreds of flowering varieties - Admission is free

It's possible that an orchid purchased at the Orchid Society of Arizona's first show in 1962 could still be alive today. In fact, with more than 25,000 varieties, some species live so long that some people bequeath their orchid collections to their heirs. Why the fascination with this exotic flowering plant?

Fifty-two years later, volunteers of the Orchid Society of Arizona are eager to share their fascination and knowledge during the special "Orchids in Art Show & Sale." This year's family-friendly event will be held at the Arizona State Veterans Home in Liberty Hall, 4141 N. S. Herrera Way (3rd St.), Phoenix, from 9 a.m. until 5 p.m. on Sat., Oct. 18 and from 9 a.m. to 3 p.m. on Sun., Oct. 19. Admission is free.

Guests will be treated to a spectacular array of hundreds of orchids for sale, each with a unique color, shape, and scent. On display alongside the beautiful orchid plants, patrons will see a variety of orchid images used to decorate our world. "Orchids in Art" will be seen in paintings, ceramics and other decorative items. The event also will feature cultural information, orchid growing supplies, raffle items, refreshments and gifts.

For information, call (602) 451-5952 or visit www.orchidsocietyaz.org.

About The Orchid Society of Arizona:

Founded in 1962, The Orchid Society of Arizona is a non-profit 501(c)(3) organization that provides hobbyists with advice and support in the process of growing orchids in the Valley's desert environment. The group also underwrites the cost and makes presentations about orchid growing to elementary schools, senior centers, garden clubs and veterans organizations.
OSA has awarded two scholarships to Arizona students majoring in Botany at Northern Arizona University and two scholarships to PhD candidates at the University of Arizona. OSA intends to continue to provide financial assistance for Arizona students.
Additionally, OSA has provided funds for world-renowned orchid taxonomists to search for orchids in remote regions of the world.
