Crema de Elote
Mexican comfort food, a warm soothing soup with the rich spiciness of poblano chiles and the potatoes make this a meal in itself
serves 4 to 6 depending on portion

for the base

1 cup chopped onion
3 cloves chopped garlic
2 cups corn
2 cups chicken stock
1 1/2 tsp salt
2 cups cream
1 tbsp maseca
corn oil as needed

add later for chunkiness

2 cups corn cut
  1  1/2 cups diced yukon gold potato boiled until al dente
1 cup roasted peeled poblano chiles diced

 for the base part saute the onion, garlic and corn with some corn oil until soft and fragrant then add stock, cream, salt, maseca and the first 2 cups corn and simmer over low heat for 10 minutes stirring and taking care not to scorch. Let cool slightly and puree until very smooth. Pour back into a pot and add reserved corn, potato and chiles heat gently and serve
