Orange Sesame Chicken Bento Box

Yield: 4 Servings  

3 each Chicken breasts, about 4oz. each, pulled or sliced

½ each Carrot, shredded

1 each Celery stalk, sliced thin on the bias

½ each Red bell pepper, cut julienne

2 each Scallions, sliced thin on the bias

2 Tbsp Cilantro, chopped

To taste:  Kosher salt and freshly ground black pepper

As needed:  Orange Sesame Dressing (recipe follows)

Directions:

1. Combine all ingredients in a large mixing bowl. Toss with just enough Orange Dressing to coat. Serve with tender salad greens, vinegared cucumbers and brown rice. 



Orange Sesame Dressing

2 each Oranges, juice (will yield about 1 cup) and zest

1 tsp Black sesame seeds

¼ tsp Togorashi

2 Tbsp Rice wine vinegar

2 Tbsp Salad oil

¼ tsp Sesame oil

To taste Kosher salt and freshly ground black pepper

Directions: 

1. In a small saucepan over medium high heat, reduce the orange juice by half (to ½ cup); cool. Transfer to a mixing bowl and whisk in sesame seeds, togorashi, vinegar, salad oil and sesame oil. Add about a teaspoon of the orange zest.



Brown Rice

1 cup Brown Rice

2 cup Water

Pinch of Kosher salt 

Directions: 

1. Combine the rice and water in a 2 qt. saucepan, season with a little salt and bring to a boil. Cover and cook over low heat until the liquid has been absorbed and the rice is tender, about 45-50 minutes. Transfer to a mixing bowl and cool to room temperature, fluffing with a fork a few times.
