That's Italian! Sedona chef shares secrets of perfect cannoliPosted: Updated:
PHOENIX -- September is National Cannoli month! And on Monday, we learned some of the finer points of making the perfect cannoli.
Sicilian-born Executive Chef Salvatore Moscato from the Hilton Sedona Resort and Spa is known for his delicious cannoli and other Italian desserts.
"Straight from Sicily," he says. "We got really close to the family recipe, because the original ricotta is goat-cheese ricotta. That's very hard to find in Arizona and the States. I've got a couple of combinations so we can go really close to the flavor and originality."

Moscato Cannoli are available a la carte on the menu at the resort's Grille at ShadowRock and in pre-packaged boxes of eight.
Recipe for Moscato Cannoli
· 8 oz ricotta cheese,
· 3 oz Goat cheese
· 5 oz Powered sugar
· ½ teaspoon lemon zest
· ½ teaspoon cinnamon
· 2 oz chocolate chips
· 20 mini cannoli shells
Combine ricotta and goat cheese and mix until smooth. Stir in lemon zest, cinnamon and powdered sugar. Fold in chocolate chips. Fill each shell with about two tablespoons of filling. Garnish with a dust of powdered sugar.
Chef Salvatore's cannoli is just one of many new things happening at Hilton Sedona Resort & Spa. This spring, the resort unveiled an entirely redesigned and renovated lobby and social space designed to bring the essence of Sedona through the doors of the resort. Guest rooms will be renovated this Fall.
