PHOENIX -- One of the latest trends in healthy eating is inspired by cavemen. But while "paleo" means old or ancient, popular paleo diet dishes are anything but.
Sunfare shared a recipe for pumpkin pancakes with blueberry sauce. The pancakes are prepared with a focus on low-carb, sugar-free and high healthy fat ingredients, such as organic pumpkin puree, olive oil, almond meal flour and agave. Then they are topped with a naturally sweetened blueberry sauce that lends just the right amount of tartness.

Pumpkin pancakes with blueberry sauce
Serves 1 person
1/2 can organic pumpkin puree
3 pcs. eggs
1 tbsp. almond meal
1/2 tsp. cinnamon
1/2 tbsp. agave
1 oz. agave
4 oz. blueberries
In a pot, place the blueberries and agave, and simmer for two to three minutes or until thick. Once thick, cool and set aside.
Mix the pumpkin puree, eggs, almond meal, cinnamon, and 1/2 tsp. of agave in a bowl and mix till it has a pancake batter consistency. Heat oil in a pan and cook the pancakes until set.
Place the cooked pancakes on a plate and top with the blueberry sauce.
