DIY Pumpkin Spice Latte

Ingredients
1 cup coconut milk
1/2 cup almond milk
1 tsp chopped ginger
3-5 whole cloves
2 inches of cinnamon stick
Grated nutmeg (about 1/4 tsp)
1/4 tsp vanilla

Instructions
Simmer the above ingredients together until liquid reduces by roughly 1/4-1/2 cup and thickens. (This will depend on how thin or thick your milks are, but you want it to thicken slightly.)

Sweeten with your favorite treat, like maple syrup or medjool dates. Just add the dates, however sweet you'd like, to the simmering liquid.

You can froth your warm pumpkin spiced milk and enjoy it with your favorite espresso or in a lovely french press cup.

In the fall, make this especially decadent with two tablespoons of pumpkin puree.
