Gourmet food ideas for tailgating

James Whiting at Oil & Vinegar of Arizona showed us how to spice up our tailgate options with easy BBQ cooking for foodies.

Cajun Mango Chicken Wings
2 dozen chicken wings
2-3 cloves of garlic, minced
2 oz Mango Pulp Vinegar
2 oz Cajun Grapeseed oil
1 tsp sea salt
2 TBS chopped cilantro
¼ cup chopped scallions

Rinse the chicken wings under cold water and pat dry.
Combine the garlic, vinegar, oil, and salt. Whisk until emulsified.
Toss the wings in the marinade and refrigerate for at least 2 hours.
Heat your grill to medium-high. Brush clean and lightly coat with oil.
Place the wings on the grill and cook until for about 15 minutes, turning once, until an internal temperature of 165 is reached.
Remove from heat. Garnish with cilantro and scallions and serve with Garlic Cream Sauce.

Zulu Spiced Corn on the Cob
6 ears of fresh corn, cleaned
3 TBS Garlic Olive Oil
1 TBS Spirit Of Africa Zulu Spice Mix
1 tsp black salt

Bring your grill up to high heat.
Mix the oil, Zulu spice, and salt together and let it sit for 10-15 minutes.
Brush the oil mixture over each ear of corn and place on the grill.
Cook until marked on all sides; about 5 minutes.

Pineapple and Lime Shrimp
1 pound of shrimp, cleaned and shells removed
2 TBS Pineapple Vinegar
2 TBS Lime Grapeseed Oil
2 tsp of minced ginger
Zest of 1 lime
1 tsp Himalayan salt
½ tsp freshly cracked black pepper

Bring your grill up to medium heat
Combine the vinegar, oil, ginger, zest, salt, and pepper.
Toss the shrimp with the marinade and let sit for 20-30 minutes.
Grill the shrimp until done- about 2 minutes on each side.
Remove from the heat and serve with Jalapeno Lime Sauce.

Grilled Watermelon
1 medium watermelon, cut in quarters and sliced into 1" slices
2 oz Elderflower, Apple and Lime Vinegar
½ tsp freshly ground pink pepper

Heat your grill to high.
Brush each piece of watermelon with vinegar and lightly sprinkle with pink pepper.
Grill until marked- about 2 minutes on each side.
