Fritto Misto-Serves 4
Escolar- 8oz(snapper/any white fish can be used)
Shallots- 5
Parsley- 1/2 bunch(chopped)
Carrots- 2
Celery Root- 1/2
Egg whites- 2
Eggs- 2
Milk- 2/3 cup
S&P- to taste

Slice shallots, fish & put in mixing bowl with chopped parsley.
Make strips of carrots & celery root with a peeler or box grater.
Add carrots & celery root to the mixing bowl with the fish mixture.
Whisk egg whites until soft peaks have formed.
Mix the egg whites with the fish & vegetables.
In a separate bowl whisk flour, baking powder, milk & eggs together until batter has formed.
Make little patties out of the fish & vegetable mixture. (Will be a little loose)
Dip patties into the batter & pan fry on medium high heat until golden brown.
Divide the fritto among 4 plates & spoon tartar sauce over.

Tartar Sauce
Yogurt- 1/2 cup
Gerhkins- 2 tbsp(copped)
Capers- 1 tbsp
Lemon- 1/2(juiced)
S&P- To Taste

Mix all ingredients together in a mixing bowl & chill until ready to serve.
