Local salt and bacon guru Aaron Eckburg of Go Lb. Salt shows us how to use locally made bacon in a special eggs benedict recipe.

Eggs benedict w/ bacon

Ingredients:

10 eggs
2 lemons
4-8 oz. sweet cream butter (sticks)
2-3 tbsp. raw cane sugar
Tabasco
1 pkg English muffins
1/2 lb. Bring Home The Bacon (Applewood-Maple, Savory Herb or Black Truffle) fresh chives
Fresh dill
Sel Gris de Guerande sea salt
White pepper

Directions:

Fry bacon in skillet until reaching desired doneness.

At the same time, place 4 cups water into pot on stove, squeeze juice of one lemon into water and bring to simmer. Turn heat down until there is no rolling water.

Separate yolks from whites for six eggs, discarding whites and placing yolks into a stainless steel bowl. Whisk yolks until fully broken and creamy, then add sugar. Place bowl on top of pot (like a double boiler) for about 15 seconds to gently warm the yolks (not cooking them) and to let the sugar dissolve. Whisk until sugar is fully dissolved.

Remove from heat and add five dashes of Tabasco, one to two pinches of salt and one grind of pepper. Whisk again.

Take one full stick of butter and cut into 1/4 inch pats. Place four pats at a time into bowl and place bowl back onto pot for 15 seconds at a time allowing the butter to melt into the yolk, sugar and Tabasco mixture -- without cooking the eggs. Continue until 4 ounces of butter has been incorporated.

Remove from heat and squeeze juice of one half lemon into the Hollandaise and whisk thoroughly. Taste and add salt, Tabasco, sugar or lemon juice as necessary to adjust taste to your personal liking. If sauce seems too thick, add butter (1-2 pats at a time) or lemon juice to adjust.

Poach two eggs in pot of water until they reach the desired doneness. Split and toast English muffins, place poached eggs on muffins and spoon Hollandaise over poached eggs.

Chop fresh chives and dill, then sprinkle over top of Hollandaise covered eggs and serve with two to three slices of bacon.

Raising money for JDRF

Haley and Ethan Maurice embarked on a 221-mile trek across the Sierra Nevadas on July 16 to raise money for JDRF. They encountered all types of extreme weather conditions and even some low blood sugar levels, but they made it and are now home. They had a lofty goal of raising $221,000, which represents $1,000 per mile of the hike. As of now they have raised $7,000 but are continuing their efforts and are optimistic about reaching a greater amount.
