Yellow Cake for Boston Crème Pie

3 lb cake flour
3 oz baking powder
1 oz salt
3 lb 12 oz. sugar
1 lb butter

Cream dry ingredients with butter until pea sized chunks, using whisk, add:

1 lb. 8 oz (24 oz)  whole milk
2 T. vanilla

Mix until smooth, scrape down and add:

1 lb. 8 oz (24 oz) whole milk
2 lb. eggs

Mix until smooth.

Spray tins well with Pam, and use 15 oz. per pie.

Mound each pie toward the outside and bake at 350 for 16-18 min

Yield:  14 pies

Let cake cool for 10 minutes and take out of tin immediately and cool bottom side down.  Let cool, then cut in half.  

2 cups pastry cream, top with other cake half


3 cups heavy cream
¾ c corn syrup
24 oz semisweet chocolate chips

Heat cream and corn syrup until hot but not boiling.  Pour over chocolate chips, let stand 5 minutes and stir until chocolate chips are melted.
