Black Mountain shrimp

Ingredients:

1 piece garlic bread toasted
1 Tablespoon pesto
3 roma tomatoes diced
1/4 cup red onion diced
1 teaspoon garlic
2 Tablespoons basil
1 teaspoon salt/ pepper
3 Tablespoons balsamic vinaigrette
1 mozzarella ball cubed

Procedure:

In a large bowl combine tomatoes, onion, basil and salt/pepper. Stir in balsamic vinaigrette and put aside. Spread pesto on toasted garlic bread. Top with tomato mixture and mozzarella.

Pesto Bruschetta with homemade mozzarella balls

Ingredients:

6 large shrimp
1 tablespoon extra-virgin olive oil
2 Tablespoons butter
2 Tablespoons sun dried tomatoes
2 Tablespoons Portobello mushrooms
1 Tablespoon Old Bay Seasoning
2 teaspoons garlic

Procedure:

Season shrimp with Old Bay. In sauce pan heat butter and olive oil and sauté shrimp and mushrooms until shrimp is cooked through.  Add garlic and sun dried tomatoes.  Serve with garlic bread.
