Cheap Meats
2-Pound London broil

Rub Ingredients:
1-Tablespoon Worcestershire Sauce
1-Tablespoon Chopped Fresh Garlic
1-Tablespoon Chopped Fresh Thyme
2-Teaspoons Olive Oil

Procedure-Combine all rub ingredients together, rub all over London broil, marinate for a minimum of 15 minutes up to 2 hours.  Pan Sear in griddle pan till desired temperature-set aside to rest.

Side Dish:
2-Cups Sliced Mushrooms
2-Teaspoons Fresh Chopped Garlic
1-Tablespoon Chopped Shallots
1-Cup of Frozen Corn
1-Cup Diced Cooked Potato
1-Diced Red Bell Pepper
1-Diced Poblano Chili
Pinch of Fresh Rosemary

Sauté all items together, (except the eggs) in griddle pan used to cook the steak.  Cook for 5-7 minutes, just a moment before removing the pan from the heat, crack 4 eggs and do a soft scramble.


Cheap Meats-Part 2
4-8 Ounce Shoulder Lamb Chops
Wet/Dry Rub Ingredients:
1-Tablespoon Dry Mint
Pinch of Cumin
1-Tablespoon Chopped Fresh Thyme
2-Teaspoons Olive Oil


Combine all rub ingredients together, rub all over Lamb chops, then pan sear 4 minutes on each side-set aside to rest.

Side Dish
1-Pound Cooked Orzo
1-Tablspoon Chopped Shallots
2-Chopped Tomatoes
2-Tablspoons Fresh Chopped Mint
2-Tablespoons Chopped Peperoncini
Pinch of Crushed Red Chili Flakes
Juice of one Lemon
½ Cup Artichokes Hearts Drained
1-Head Iceberg Lettuce –Cut into ½” thick slices

Using the Lamb chop skillet, sauté shallots for 2 minutes, then add remaining ingredients,  except Ice berg lettuce) continue sautéing until all items are warm.  Once fully cooked place lamb chops on one side of the plate, and the sliced lettuce on the other.  Take heated Orzo mixtures and place on top of lettuce slice.
