Cool summer recipes using watermelon

PHOENIX  -- One of the most refreshing treats of summer has to be watermelon! And there's so much you can do with this sweet summer fruit.

Julie Moreno of Jewel's Bakery and Cafe joined Kaley O'Kelly Monday morning with some cool and creative summer watermelon recipes and ideas.

Moreno, a mom of six, first showed us how to keep the kids happy and healthy. She used cookie cutters to cut out watermelon popsicles. Just stick them in the freezer and you're ready to go.

She also demonstrated how to make a refreshing watermelon salsa. "You're taking diced watermelon. You're taking fresh nectarines," she says. "You're taking jalapenos, some red onion and lots of cilantro." Ginger, orange zest and sugar finish off the recipe.

You can put the salsa on grilled steak or fish, or eat it on its own.

Watermelon can also be used to make an "agua fresca," which contains sugar, water and fruit. For adult versions, you can add alcohol.

You can also serve cut-up fruit in watermelon bowls. "It's just a different way to serve," she says.

Lots of folks even grill watermelon! "Just touch them on the grill," Moreno advises. "You don't want to get them too hot."
