Strawberry Deep Fried Ice Cream

Vanilla Ice Cream
Frosted Flakes
Ground Cinnamon
Chopped Dried Strawberries
Toasted Coconut
Whipped Cream
Strawberry Coulis (see below)

Strawberry Coulis -- Ingredients
1 cup strawberries
1/2 cup sugar
1 tbsp. lemon juice

Strawberry Coulis -- Method
In a medium saucepan, combine the strawberries, sugar, and lemon juice. Bring to a boil over medium heat. Reduce until desired thickness and then blend. Strain if desired.

Combine frosted flakes, cinnamon, sugar, dried strawberries, and toasted coconut in mixing bowl and mash.

Roll ball of vanilla ice cream in mixture and place in serving dish.

Top with whipped cream and strawberry coulis and serve

Strawberry Chimichanga

Flour Tortillas
1 Box Cut Strawberries
1 Cup Sugar
Plastic Bag
1 tbsp. Cinnamon
1 tbsp. Brown Sugar
6 Cups Cooking Oil

Place cut strawberries and sugar in plastic bag and marinade over night.

Combine sugar coated strawberries, cinnamon and brown sugar in mixing bowl.

Add mixture to center of tortilla. Fold and deep fry in oil.

Once fried cover with cinnamon and sugar and top with strawberry coulis.
