Easy brunch ideas for Mother's Day

PHOENIX -- Mother's Day is coming up this weekend, and you want to make sure you treat the moms in your life like queens for the day!

On Thursday's Good Morning Arizona, Heidi Goitia bought us some easy Mother's Day brunch ideas, courtesy of Luci's Healthy Marketplace.

Lucia Schnitzer showed us how to make Pancake Puffs, and a tasty treat called Egg in a Bell Pepper Flower.

Egg in a Bell Pepper Flower
1 each Yellow and Red Bell Pepper sliced
2 - 3 whole eggs
salt and pepper to taste

Choose a variety of colored bell peppers. Core and cut the peppers into 1/2-inch
slices. Heat a little oil in a medium-heat skillet. Cook the pepper rings on one side
for 20 to 30 seconds to soften; don't let them brown. Turn and press them down
slightly with a spatula.

Working with one at a time, break an egg into a ring and
immediately hold the ring down with a spatula for a few seconds to keep the egg
from seeping under. Season and continue cooking the eggs to your desired
doneness. Trim away any egg outside the rings. Garnish with a sprinkling of
chopped basil or dill if you like and serve immediately.

Pancake Puffs
Makes 12 cups
1 C flour
1 Tbsp baking powder
1/4 tsp salt
1 C almond milk
2 Tbsp melted vegan butter
3 Tbsp maple syrup

Preheat oven to 350 F.
In a bowl mix together the almond milk, butter, and maple syrup. Add in the
flour, baking powder, and salt and whisk until combined.
Divide the batter among 12 muffins tins, and add in your favorite mix ins. Bake
for 12-14 minutes. Mix in ideas: vegan chocolate chips, banana slices, berries, peanut butter
