Your Life A to Z Recipe: Monday, May 5th, 2014: Burrata Cheese Crostini and Beef Tartare Toast with Caviar

Build your own Burrata Cheese Crostini
Yield: Serves 4

INGREDIENTS
•1 lb burrata cheese
•12 slices of baguette
•1 pint of cherry tomatoes
•1 tbsp julienne basil
•1 cup of Arugula pesto
•2 tbsp of Smoked bacon bits
•1 tbsp kosher salt
•1 tbsp freshly ground white pepper
•½ cup EVOO

Arugula Pesto:
•½ lb arugula
•1cup of olive oil
•3 cloves garlic, peeled, minced
•Juice of 1 lemon
•¼ shredded parmesan cheese
•¼ cup marcona almond or pine nuts
•Kosher salt & freshly ground white pepper

METHOD

Pesto: In a blender puree the arugula, parmesan cheese, garlic, almonds all together for a few minutes, then slowly add the olive oil and seasoned to taste.
Tomatoes: Preheat the oven to 350 degrees. Tossed tomatoes with olive oil, salt & pepper and place it on a baking sheet. Roasted for about 45 minutes, cool it down then tossed it with chopped garlic, basil and olive oil.
Crostini: Pre the broiler, brushed olive oil and garlic on each side of the slice bread and quickly grilled it till golden brown on each side.
Smoked bacon: Utilizing any leftover bacon, just cook it till extra crispy and chopped it in to a bits.
Assembly: assembling the dish can be your choice of presentation.

Beef Tartare Toast with caviar
Yield: Serves 4


INGREDIENTS
•12 oz of Beef Filet or Strip Loin (finely dice)
•12 slices of ciabatta bread
•1 tbsp minced red onions
•1 tbsp chopped chives
•2 tbsp of chopped capers
•1 ea hard boil egg grated
•1 tsp Dijon mustard
•1 ea lime zest
•1 tbsp Worcestershire sauce
•1 oz of caviar
•2 tbsp parmesan cheese
•Seasoned to taste

METHOD
Tartare: In a small mixing bowl combine the dice beef with all the ingredients for exemption of the parmesan cheese.
Crostini: Pre the broiler, brushed olive oil and garlic on each side of the slice bread and quickly grilled it till golden brown on each side.
Assembly: place the tartare on the crostini, sprinkle some caviar and garnished with the parmesan cheese.
