Your Life A to Z Recipe: Wednesday, April 30th, 2014

Beer Mac N' Cheese

(Bechamel)
 
1/2 lb. Unsalted Butter
 
1/2 lb. All Purpose Flour
 
1 qt. Heavy Cream
 
1 qt. Beer (your choice)
 
Melt butter down on medium heat, add flour and whisk together for the roux. Whisk in milk and beer (do not stop whisking) until a thick consistency.
 
Note: Cook ingredients in a stainless steel pot to reduce color and sticking to pan.
 
2 lb. Pasta (your choice)
 
3 ea. Roasted, peeled and seeded Hatch Chilies (diced)
 
1 lb. Rendered bacon (diced)
 
1 lb. Cheese blend (your choice)
 
1 cup Chicken stock
 
Salt and pepper to taste
 
On medium high heat, add 4 oz. bechamel to sauce pan. Once hot, add all ingredients (pasta, bacon, hatch chilies, cheese blend, chicken stock, salt and pepper) and cook until preferred consistency (creamy). Serve in your favorite bowl and enjoy!
