Spring Mozzarella Salad

mozzarella curds- 1lb
olive oil- 4 tbsp.
oven roasted strawberries- 1lb
sliced cucumber- 1/2
parsley leaves- 1/2 bunch
torn basil- 1/4lb
radish sprouts- 1 cup
spring garlic vin- 3 tbsp.
olive oil- garnish
sea salt- garnish
Spring Garlic Vin
1 stalk spring garlic- sliced
1 cup olive oil
1/3 cup white balsamic
salt & pepper to taste
Oven roasted Strawberries
Cut strawberries in half.
Toss strawberries with olive oil & salt.
Put strawberries into baking pan & roast for 25 minutes in a 350 degree oven.
After they come out of the oven toss the cucumbers with strawberries & spring garlic vin.
Fresh Pulled Mozz
Heat a small pot of water to medium low heat.
In a mixing bowl fill half way with water & ice.
Break mozz curds into 4oz piles.
Working 1 pile at a time crumble the curds into the warm water.
Let the curds heat up for 1 min.
Gather with hands(or spoon) stretch & form into a ball.
When finished forming a mozz ball place each one in the ice water to cool.
Place each mozz ball into 1 or individual bowls.
Top with strawberry cucumber mix, garnish with olive oil & sea salt.
Sprinkle herbs & radish sprouts around the plate.
