Italian Dry Salami and Fresh Burrata Sandwich

1 crusty and crunchy Baguette

½ medium red onions

Columbus Italian dry salami

1ea 3oz Ball Burrata Cheese

½ cup sundried tomato

2 cups Arugula

Drizzle of olive oil and balsamic vinegar


Toast the bread whole for a couple minutes before slicing it in half. One sliced open layer the salami, on the bottom then add arugula, sundried tomato, onion and buratta cheese. Drizzle the olive oil and vinegar. Finish with cracked pepper and sea salt. Top the sandwich and enjoy.

Columbus MeatUp Food truck tour with Fabio Viviani will be stopping at the Scottsdale Culinary Festival on Saturday, April 12th from Noon-8pm for Columbus Foods salame and deli meat sampling. Fabio will also be doing cooking demonstrations.


Two Italian favorites are teaming up as Top Chef fan-favorite Fabio Viviani joins Columbus Foods for its MeatUp food truck tour, inviting Americans to explore the simple Italian goodness of premium salumi and deli meats.  They're hitting the road this April and May, spending a week each in Scottsdale, Salt Lake, Boston, New York Metro, and New Orleans, sampling their premium products at AJ's Fine Foods while Chef Fabio Viviani will woo the crowds at Scottsdale Culinary Festival on Saturday, April 12th at the VIP Experience from Noon-8pm.

Perhaps best known for his appearance on season 5 of Bravo's hit reality series Top Chef in 2008, Chef Fabio Viviani is a perfect addition to the Columbus family.
