Capellini in a Spicy Red Wine Sauce

Ingredients   
½ lb angel hair pasta (capellini)
2 cloves fresh garlic sliced thin
4 basil leaves torn
3 mint leaves torn
¼ cup extra virgin olive oil
2 cups red wine
1 teaspoon red chile flakes
¼ cup grated Parmigiano Reggiano
¼ cup grated ricotta salata
S&P to taste

Procedure
Cook pasta in boiling salted water for approximately 7 minutes. Strain pasta saving pasta water just in case. While pasta is cooking heat a medium skillet over medium heat with olive oil, garlic and chile flakes. Once garlic gets toasted add red wine. Let cook for a few minutes and add pasta stirring frequently. Once pasta turns is cooked to your liking, grate parmigiano reggiano and toss through with basil and mint. Place pasta in bowl and top with grated ricotta salata.

Salsa di Pomodorini Crudo (Raw Cherry Tomato Sauce)

Ingredients   
1lb ripe cherry tomatoes
2 cloves fresh garlic sliced thin
4 basil leaves torn
½ cup extra virgin olive oil
Parmigiano Reggiano to grate
S&P to taste
½ lb choice of pasta (cooked to specifications)

For the Sauce
Cut cherry tomatoes in half and place in a non reactive bowl. Add garlic, basil, olive oil and season with salt and pepper. Let tomatoes rest for approximately 15-20 minutes until juices are released.

For the Pasta
Cook your choice of pasta to manufacturer’s specifications. Drain pasta and toss into tomato bowl. Grate parmigiano reggiano cheese and thoroughly mix.

Sweet Pepper & Hazelnut Pesto

Ingredients   
2 cups piquillo peppers
2 cloves fresh garlic
4 basil leaves torn
½  cup extra virgin olive oil
1 Tablespoon toasted hazelnuts
½  teaspoon red chile flakes
½  cup grated Parmigiano Reggiano
1 teaspoon sherry vinegar
S&P to taste

Procedure
Place all ingredients except for olive oil, salt and pepper in a mason jar. With a stick blender, puree until a smooth paste. Add olive oil salt and pepper to taste. Place cap on jar and shake vigorously until all ingredients are combined. Use pesto sauce on pasta.
