Chicken Pretzel Sandwich

4-Chicken Breast-Grilled
½ Cup Harrissa (available in stores)
4-cups Arugula
1-Avacado –sliced
1-Red Jalapeno-sliced
¼ Cup Red Wine Vinegar
4-Pretzel Buns


Combine Jalapeno, and vinegar, set aside. Slice rolls and remove excess dough, then place one tablespoon harrisa on bread, layer, chicken, arugula, avocado and finish with Jalapeno and vinegar dressing.

Shrimp Cocktail Sandwich

2- Cups Cooked & Cooled Shrimp
½ cup Cream Cheese
2-Tablespoons Chopped Celery
1-Tablespoon Chopped Red Onion
2-Teaspoons Horseradish
1-Tablespoon Ketchup
1-cup Sautéed Garlic Spinach
1-cup French’s French Fried Onions (or store brand)
4-6” Hoagie Rolls
Salt & Pepper to Taste

Combine shrimp, cream cheese, chopped celery, red onion & horseradish, set aside. Place Garlic spinach on Brad, place shrimp mixture on top of spinach, top with fried onions.

Hummus Pita Sandwich

8 – 6” Round Pita Bread
1-Cup Hummus
1-Cup Kale Pieces
1-Tablespoons Olive Oil
1-Teaspoon Mo’ Rockin Spice
1-Zuccini –Grilled & Sliced
1-Yellow Squash – Grilled & Sliced
1-Red Pepper- Grilled & Sliced
2 ounces Pickle Juice
1-Serrano Chili-Cut in Half

Combine together Kale, Olive Oil, & Mo’ Rockin spice, set aside. Combine cucumber, pickle juice and Serrano chili together, set aside. Spread hummus on pita, one side only, then layer sandwich with kale combination, grilled vegetables, tomatoes and finish with cucumber relish. Place top of pita, then cut in half.
