Sicilian Cocoa Caponata
For 2

1 Eggplant medium dice
1 red pepper medium dice
¼ cup small dice red onion
¼ cup fennel small dice
¼ cup chopped tomatoes
1 clove garlic minced
¼ cup raisins
1 Tbspn pinenuts
1 Tbspn balsamic vinegar
1 torn basil leaf
Pinch of salt
Pinch of chile flakes
1 tspn dark cocoa powder
2 Tbspn extra virgin olive oil
1 Tbspn cocoa nibs

In a skillet over medium heat, sweat the garlic and onion until onion becomes translucent. Add the rest of the vegetables and cook until the vegetables begin to break down. Add the vinegar, raisins, nuts and cocoa powder. Cook until all flavors come together approximately another 3 minutes. Add torn basil and season with  salt and red pepper flakes. Top with cocoa nibs.
