Recipe Name:        Pancetta wrapped bistro Filet

7    oz    bistro filet
2    oz    pancetta thinly sliced
2    oz    olive oil for cooking
          salt / pepper to taste        
2    oz    red wine sauce    
        
Method of Prep:        
1        lay out pancetta on plastic wrap
        
2        top with filet and roll tightly
        
3        refridgerate for 1 hour
        
4        remove plastic, seoson with salt and pepper
        
5        in a hot pan with olive oil sear filet and roast until medium rare
        
6        slice meat and serve with red wine sauce and onions

        
Recipe Name:        Glazed Pearl Onions
       
1    cup    peelled pearl onions
1    cup    water
2    tbl    sugar
1    tbl    cold butter
1    sprig    fresh tyhme
1    ea    fresh bay leaf
        salt to taste    
        
Method of Prep:        
1        boil all ingrediants except butter until al dente
        
2        add butter and emulsify until tender
