Your Life A to Z Recipe: Tuesday, January 28th, 2014

Farinata (Chickpea Flatbread) - 2 flatbreads
Ingredients:

2 cups chickpea flour (preferably hayden mills)
8 tbs olive oil
2 tsp salt
2 tsp black pepper
1 1/2 cups mineral water
2 tbs rosemary (chopped)
2 spring onions (sliced)
2 cups ricotta
2 cups dried tomatoes/sun dried (chopped)

Procedure:

  • Mix flour, water, salt & pepper
  • Let dough rest for 2 hours
  • If a layer of foam develops remove
  • Add olive oil
  • Pour into oiled baking pan/frying pan
  • Top with tomatoes, ricotta, spring onion & rosemary
  • Cook at 400 degree oven for 10 minutes
  • Season the top with olive oil, salt & pepper to taste
  • Cut into pizza looking slices & serve while warm
