Grilled Veal Chop, Popcorn Puree, Chipotle Mustard Glaze, Roasted Poblano, Grilled Mushrooms
serves 2-4


2-4 veal chops
1 tsp oil
1 tbl. soy
1/2 can of beer, something hoppy
1 tbl. rice wine
1 tsp. chile powder
1 tsp. dried oregano
1 tsp. fresh rosemary leaves
1 tsp. celery seed
1 tsp. fennel seed
1 tbl. brown sugar

Mix all of the ingredients in a bowl or a large ziplock bag. Season veal chop with salt, at least an hour before grilling, and cover with marinade.

Popcorn Puree
3-4 c. popcorn
1/2 c. cream
1 tsp. coconut butter
1-2 tbl. butter
1 pinch tumeric or saffron

In a large sauce pot heat cream with tumeric/saffron. Add popcorn and stir until broken down. Add butter and coconut butter to consistency and taste. Puree with hand blender, season.

Chipotle mustard glaze

1c. chicken stock
1/2 c. veal demi
1 tbl. chipotle puree
1 tbl. dijon mustard
1 tbl. apple cider vinegar
1 tsp. molasses
1 tsp. maple syrup
1 tsp. fennel seed
1 tsp. celery seed
1 tsp. dried oregano

1 tbl. whole grain mustard
1-2 tbl. good euro butter

Place all ingredients except butter and whole grain mustard, in a sauce pot, reduce to sauce consistency. Pass through fine sieve. Add whole grain mustard, butter and season.

Roasted Poblano, Cipolline Onion, Grilled Trumpet Mushrooms, Raison, Pepitas

6-8 Cipollini onions
4-5  Poblanos, peeled, seeded, large julienne
3-4 quartered trumpet mushrooms, grilled
1/2 c. raisons soaked in vinegar
1/2 c. cider vinegar
1/4 c. pepitas
1/4 c. diced roast garlic
1 tbl. chile powder
1 tsp. dried oregano
1 tbl. fresh cilantro
1/4 c. honey
1 tbl. evo

Grill or roast cipollini onions. Cool and slice in rings. Grill or roast trumpet or other mushrooms, cool and slice. Char Poblano peppers, peel, de-seed and slice in long strips. In small sauce pot bring vinegar, honey up to a boil. Add all of the rest of ingredients and finish with salt, pepper and e.v.o.
