Homemade ice cream -- Dos and don'ts

PHOENIX -- Homemade ice cream can be a wonderful treat any time of the year, especially if you get creative with the ingredients.

Award-winning chef Justin Beckett share some tips with 3TV's April Warnecke.

Never use a whisk or equipment that incorporates air freezing quickly.

Fresh fruit will add extra water that will turn to ice, so use fruit purees or concentrates instead.

Fold in solid pieces of garnish, such as candy, after the machine is done running.

Layer in the "swirls" of items like caramel or chocolate sauce.

Stay seasonal with your flavors.

Make sure you plan ahead; even after the ice cream comes out of the maker, it will need to sit overnight in the freezer.
