Holiday Breakfast Ideas for the Your Company

For the holiday host, the main focus is on the big meal, but you can't forget breakfast when your visiting company wakes up hungry.  Here are some festive ideas for the Thanksgiving and Christmas Day morning meals that are creative, tasty and so easy that the kids can help make some of these ideas, too.

Thanksgiving Turkey Feathered Fruit Salad
I found this one on Facebook and I couldn't wait to share because this fruit salad is easy to assemble, pretty to look at and fun to eat.  The big fruit salad shapes up to look like a turkey.  Here is what you need and what you do to make it....

What You Need:
1 green pear
1 bag of red seedless grapes
pineapple chunks
kiwi slices
tangerine quarters
As far as quantity of each fruit listed above, it is up to you how much you want to use based on how big you want to make the salad. 

What You Do:
1.  Place a halved pear in the middle of the lower part of a platter.  Face the pear upwards with the skin on so that it looks like a face.  Place two small bunches of kiwi seeds for eyes and a piece of the tangerine for the nose.  This is the turkey's face and you can see the example by watching the segment.
2.  Next place grapes all around the pear face so that they look like turkey feathers.
3.  Next place the pineapple chunks above and around the grapes. 
4.  The blueberries go next and again are placed above and around the pineapple chunks making it look like turkey feathers.
5.  Up next place the strawberries above and around the pineapple chunks.
6.  The Kiwi slices come next and are placed above and around the pineapple chunks.
7.  Last place the tangerine quarters above the kiwi slices and your fully feathered fruit salad that is shaped like a turkey is ready for presentation and ready to eat.

Festive Fruit Salad Candy Canes:

What You Need:
1 bunch of bananas
box of strawberries

What You Do:
1.  Simply slice bananas leaving the end slice intact so that it is naturally rounded.  Then slice strawberries.
2.  Place the banana slices and strawberry slices one right after another into a candy cane shape and place on platter.  Watch the segment to see how easy this is to do.

Fruit Grinch Santa Sticks

What You Need:
1 bag of Mini Marshmallows
1 box of strawberries
1 bag of green seedless grapes
Diamond (or similar brand) Plastic Forks (found mine at Safeway)  The ones I found come in red, green and white, so the colors are perfect and they aren't too sharp for little kids.

What You Do:
1.  Cut the strawberries into quarters. 
2.  Push one mini marshmallow onto the top of the fork stick.
3.  Next place a strawberry right below the marshmallow and then add the green grape.
4.  Each layered stick looks like a little Santa hat on a green grinch head.  So cute!

Amanda's Simple Sausage Breakfast Bake
I asked my gal pals for their favorite holiday breakfast recipe and they were all yummy to test and eat.  I selected Amanda's for the segment because it can be prepped the night before, it is a good base recipe that additional ingredients can be added to based on your crowd and it is tasty!

What You Need:
Glass dish
10 or so slices of bread, edges trimmed
Butter for spreading on bread
1 1/2 lbs of sausage browned
1 1/2 cups of cheddar cheese
6-8 eggs
1 1/2 cups of half and half
salt to taste
Note - I added to her recipe.  I added one can of green chilies, diced onions and 1/4 of one diced red bell pepper to give it a green and red Christmas appearance and to add some spice.

What You Do:
1.  Spray large rectangular baking dish with non stick spray. Place buttered bread in an even layer on bottom of dish to cover the bottom.
2.  Mix cheese, eggs, half and half, and salt together in a separate bowl.
3.  Crumble sausage over bread  pour egg mixture over sausage.  (I then topped with the green chile, onion and red bell pepper)
4.  Cover and refrigerate overnight.
5.  Bake in the morning at 350 for about 40-45 minutes or until it is nicely browned on top. 
Amanda tells me that she sometimes sprinkles a little Parmesan cheese over the top or she serves by itself with a little salsa.  Thank you Amanda for sharing this yummy recipe.
