PHOENIX -- Are cooking for a vegetarian this year at your Thanksgiving feast? Their dinner doesn't have to be limited to just side dishes and tofu.

Chef Jeff Caswell of EVO in Old Town Scottsdale made a tasty main-course where vegetables are the star -- Polenta stuffed portobello mushroom with Gorgonzola, walnuts and pumpkin cream sauce.
