Pollo Con Nopales

1-1/2 lbs boneless chicken (thighs & breasts mixed) cut into strips
2 large Cactus paddles, spines removed, cleaned & diced
2 cups fresh cut corn kernels
1 cup chopped onion
1 cup chopped Roma tomato
1 cup chopped Poblano chile
6 Guajillo chiles
2 Arbol chiles
2 tsp Oregano
1 tsp ground Cumin
4 cups chicken stock
2 cloves chopped garlic
2 tsp salt
1 tsp pepper
extra salt & pepper to season chicken
1/2 cup olive oil

Season chicken with salt & pepper, set aside.  In a dry skillet toast Guajillo and Arbol chiles until lightly browned, put in blender with chicken stock and Oregano, puree until smooth.

Heat oil over medium-high heat in a large wide pot. Add chicken and cook until lightly browned, add onions, poblano chiles, garlic, corn and Nopales. Cook for about 5 more minutes until all is lightly browned. Add chicken stock-chile mixture and remaining seasonings and simmer for about 20 minutes on low heat. Serve in bowls topped with Ancho Chile Crema.

Ancho Crema

1 cup Sour Cream
2 tsp Orange juice
1 tsp Lime juice
pinch salt
zest of 1/3 lime
zest of 1/3 orange
1 tsp Ancho Chile powder

Combine & mix well. Refrigerate until ready to use.
