Pecan Wood Grilled Angus Burger
Caramelized Onions, Goat Cheese and Arugula

4-8oz             Angus Burger Patties
2 each        Large red onions
4 oz.            Balsamic vinegar
1 oz.            olive oil
12 oz.            Fresh Goat Cheese
4 each         Brioche Buns

Slice the onions on the bias.
Heat a little olive oil in a small frying pan.  Add the onions and cook until they are golden brown. Add the balsamic vinegar and reduce until almost dry.

Season your Burger patty with Salt and Black Pepper.

Grill on High heat about 4 minutes on each side to medium rare.

Build your burger with the patty the onions then goat cheese that you have crumbled and arugula on top.

Grilled breast of Chicken Sandwich

4-5oz             Chicken breast, Boneless
4slices        Apple wood smoked Bacon cooked crispy
4 slices        jack cheese
1 oz.            Olive oil
1each            Avocado, sliced    
4 each         ciabatta squares
1 lemon        Lemon zest and juiced
1 tsp.            Ancho powder
2 0zs            Red Pepper Puree
1 oz.             Mayonnaise

Toss the chicken with the lemon juice ancho powder, salt and pepper. Let it marinate for 5 minutes. Toss with oil and grill. Until cooked through.

Mix the mayo and the pepper puree together and season to taste.

Spread the red pepper mayo on the bread.  Slice the chicken and place on the bread. Put the avocado slices, cheese and crisp bacon on it.  Choose lettuce of your choice (romaine works well) and add it to the sandwich.
