Baby-Back Ribs

Rib Rub:
½ Cup  Paprika
½ Cup  Sugar, Granulated
½ Cup  Brown Sugar
¼ Cup  Garlic Granulated
¼ Cup  Kosher Salt
2 Tbls   Black Pepper, Course
2 Each Baby Back Rib Racks
2 Tbls   Garlic, Minced Fresh
2 Tbls   Shallots, Minced Fresh
2 Tbls  Liquid Smoke Flavoring
1 Btl     BBQ Sauce, Your own personal favorite
1 Pint   Water, Cold
Pre-heat oven to 400 degrees. In a small bowl, combine all the dry spices together. Season ribs generously on both sides and place on a baking pan. Divide fresh garlic and shallots evenly between both ribs. Add liquid smoke to ribs. Place ribs in oven and bake for 30 minutes, allowing ribs to caramelize.
Remove ribs from oven and transfer to a roasting pan. Turn oven temperature down to 250 degrees. Pour cold water over ribs to stop the cooking process. Add BBQ sauce to ribs, reserve ½ cup of sauce. Wrap to top of the roasting pan with plastic film, air tight, and then cover roasting pan with foil.
Place ribs back into oven and cook for 1½ hours or until ribs fall off the bone. Remove from oven and transfer ribs carefully to a baking pan, lightly baste with remainder of BBQ sauce and place back into oven at 400 degrees for 10 minutes.
