Green Chile Shrimp Fettuccine

Serves 16


   1 cup purchased green chile salsa (Frontera Grill brand is best)
   1 pound cooked medium-sized shrimp
   1 pound whole wheat fettuccine
   1/4 cup finely grated Cotija cheese (optional)


 In a large skillet, heat the salsa over medium heat.  Add the shrimp and heat until warmed through.  Keep warm over low heat.

 Fettuccine:  Bring a large pot of water to a boil; salt liberally.  Add the fettuccine and cook until tender, about 10 minutes.  Drain, but do not rinse.

 Add the drained fettuccine to the skillet with the shrimp and sauce; mix well.  Turn out into a large bowl and sprinkle with cheese, if desired.
