Summer Tomato Sandwich With Molasses Dijon Spread

Ingredients - Tomato sandwich
4 Tbsp. butter
4 slices bread
Smoked sea salt to taste
2 Tbsp. Molasses Dijon Spread (see below)
8 slices red tomato
4 slices yellow tomato
Red onion, sliced thinly (2 slices)
Small bunch of watercress

Ingredients - Molasses Dijon Spread
2 cups mayonnaise
1 cup Dijon mustard
2 Tbsp. molasses
1 tsp. Kosher salt

Directions for sandwich
Heat sauté pan on medium heat. Add butter, and when melted, add bread and grill until both sides are toasted.  Rmove from pan and spread each side of bread with equal amounts of Molasses Dijon Spread. 

For each sandwich, layer 2 slices of red tomato on 1 slice of bread. Season with sea salt.  Add 2 slices of yellow tomato and season with sea salt.

Add onion, 2 remaining slices of red tomato and watercress. Top with other slice of bread.

Serve immediately.

Directions for Molasses Dijon Spread
Add ingredients to a large mixing bowl. Using a whisk, mix until completely blended. Store covered in the refrigerator.
