Chef Dad’s Baked Italian Chicken
1 (24 oz.) Bottle of Marinara (your favorite)
3-4 lbs. Chicken (legs, breasts, thighs, etc.)
Olive Oil
Seasoning Mix (see below)
1 Large Brown Onion (diced)
2 Tomatoes (diced)
1)      Pre-heat oven to 350 degrees
2)    Combine 1 tablespoon of salt, 1 tablespoon of basil flakes, 1 tablespoon of oregano flakes, 1 teaspoon of garlic powder and 1 teaspoon of black pepper together and mix well.  If you like a little heat, add ½ teaspoon of crushed red pepper flakes.  Set aside.
3)    Put your diced onion & diced tomato together in a bowl then set aside.
4)      Rub chicken pieces with olive oil then sprinkle all sides with your seasoning mix.
5)      In a large skillet over medium-high heat, add another tablespoon or so of olive oil to the pan then fry your chicken on both sides until the skin browns slightly (approx. 2-3 minutes per side).
6)      Lay chicken in casserole dish, skin side up.  Pour pasta sauce over top of chicken to cover all pieces.  Sprinkle your onion/tomato mix over the top of the sauce.  Cover with foil then bake for 45 minutes.
7)      Remove from oven, keep covered and let rest for 5 minutes before serving.
Serve with pasta, French bread and/or salad.

Celebrate Mother’s Day with Brunch, Dinner Special in Talavera
Mother’s Day, celebrate Mom with an elegant Mother’s Day brunch and special dinner at Talavera at Four Seasons Resort Scottsdale at Troon North on Sunday, May 12, 2013.
The Mother’s Day brunch is offered from 10 a.m. to 3 p.m. in the Resort’s signature Talavera restaurant.  Guests can enjoy a “Flavors from the Sea” buffet, inclusive of shrimp cocktail, oysters on the half shell and smoked salmon.  Specialty items from the carving station include slow roast prime rib and Chilean sea bass, along with honey glazed ham.  An omelet station, cheese and charcuterie selection, and dessert offerings round out the menu.  The cost is $87 per person, and $37 for children ages 5 to 12.  Guests may add a bellini or Bloody Mary for an additional $10.
Talavera will offer a Mother’s Day dinner from 6 to 9:30 p.m.  A special prix fixe menu is featured for a cost of $75 per person, and a limited a la carte menu also will be available.
Families will enjoy the complimentary Mother’s Day carnival from 10 to 11 a.m. on the outdoor lawn.  Featured activities include a bouncy house, hula hoops, ball games and cookie decorating.  This event is open to guests of the Resort, as well as visitors attending the brunch in Talavera.

Angelita’s Amigos Inc. is a volunteer, non-profit organization established in 1988 to honor the memory of Angela Grace Olivas. Angela was a victim to leukemia at the tender age of four. Our organization is dedicated to the fight against this dreaded disease and other forms of diseases that attack our families. Our goal is to help the families in our communities who have children affected by this disease.
Each May, Angelita’s Amigos host a one-day golf tournament with over 250 golfers across two courses to raise funds towards the organization’s goals. Thanks to our participants and sponsors, our past golf tournaments have contributed over $250,000 to St. Joseph’s Hospital! These proceeds were previously used to establish sixteen family friendly rooms where parents can comfortably stay with their child while they go through treatment.
We are happy to announce that this year we will continue the Angelita’s Amigos work of helping families in dire medical situations by creating fifteen private rooms at St. Joseph’s Hospital Antenatal Unit (a.k.a prenatal). The Antenatal Unit assists women with pre-childbirth complications during pregnancy. St. Joseph’s team of doctors, nurses and other reproductive health experts consult and treat the expectant mother and her child with various conditions or diseases.
