4Th grader shows off winning 'healthy' lunchbox recipe

PHOENIX -- Many parents know the battle of the lunchbox. You want to pack something healthy, but it has to be something your kids will eat.

On Wednesday's Good Morning Arizona, Javier Soto hit the kitchen with a ten year old chef-in-the-making, whose healthy recipe earned him a big prize.

Henry Palmer is the winner of the Blue Cross Blue Shield Walk On! Cooking Challenge. The contest  asked kids ages nine to 12 to to submit their favorite, healthy lunchbox recipe.

Henry's "Brain Berry Parfait" nabbed the winning score from the judges.

"It has Greek yogurt, granola, lots of berries and Turbinado sugar," says Henry.

The Madison Camelview 4th grader teamed up with a professional chef to create his dish. Saul Velazquez, executive chef for Fox Restaurant Concepts’ Blanco, helped the young student come up with the concept.

The folks at Blue Cross explain why they picked Henry's recipe as the winner.  "At Blue Cross Blue Shield, health and wellness is very important to us," says Jessica Blomster. "It's also very important to us to teach children and adults alike that really healthy living is all about decision making. So that's what Henry did with this dish."

Henry won a bike for his winning recipe.

If you'd like to try it at home, here's the recipe:

Brain-Berry Parfait
Serves 1

1 cup reduced fat, plain Greek yogurt
1 tsp. Turbinado sugar or honey to mix into yogurt
Fresh blueberries, strawberries or raspberries
Orange-cranberry granola
Airtight container
Optional mom-approved ingredients: flax seed or wheat germ

Assemble the dish in the airtight container as follows: Start with a layer of berries and top with yogurt, add one more layer of berries and one more layer of yogurt in the container and top with granola.
