On Sunday, February 24, 2013, Famous Dave's locations in Chandler, Peoria, Mesa and Gilbert are celebrating and thanking our local First Responders. Valley Law Enforcement (Police and Sheriff), Fire and Emergency Medical Services (EMS) will receive a Free Famous Dave's BBQ Two Meat Salute.
The Two-Meat Salute is a choice of two different meats: St Louis-Style Spareribs, Georgia Chopped Pork, Texas Beef Brisket, Hot Link Sausage, Southside Rib Tips, Beer-Battered Cod, Country-Roasted or Barbeque Chicken and Traditional or Boneless Chicken Wings. The Two Meat Salute will be served with a honey-buttered corn muffin and a choice of one side.
"We have so much appreciation and respect for our local First Responders and want to dedicate this day to them and show our support of their efforts," said John Erlandson, owner of the Valley's four Famous Dave's BBQ Restaurants and Catering company. "We encourage our community to come in and say thanks and shake the hands of those who protect and serve us."
Arizona Law Enforcement, Fire and Emergency Medical Service personnel with valid photo identification and proof of service can receive this free meal. This offer is only valid on February 24, 2013 at the four Famous Dave's BBQ restaurants in the Valley including Chandler at 3250 West Frye Road; Peoria at 16148 North 83rd Avenue, SanTan Village in Gilbert at 2206 E Williams Field Rd and Mesa Riverview in Mesa at 1011 Dobson Road.

TRI TIP RECIPE
2-3 lb Sirloin Tri-Tip
½ cup Brown Sugar
½ cup Famous Dave's Brisket Rub
· Salt, sugar, paprika, spices, dehydrated onion, dehydrated garlic, molasses
1 Tablespoon Black Pepper
Texas Pit Horseradish Sauce
· Famous Dave's Texas Pit BBQ Sauce, prepared Horseradish, honey
Seasoning and Smoking
Place Sirloin Tri-Tip on cutting board fat side up. Trim to 1/4" of fat evenly
Remove all Fat and silver skin from the Underside of the Tri-Tip
Firmly rub half(1/4 cup) of the brown sugar into the meat, covering the whole surface of the Tri-Tip
Firmly rub half(1/4 cup) of the Brisket Rub into the meat, covering brown sugar coating
Sprinkle seasoned Tri-Tip with 1½ teaspoon black pepper and press it into the rest of the rub
Flip the Tri-Tip over to reveal the top, or fat side, and repeat
***Smoke with fat-side up
*Fat side up allows the Tri-Tip to stay moist
Smoke for 1½ hours at 225 to 250 degrees, or until internal temperature reaches 125°-130°
*For more well done meat cook until 140° for medium or 150° for medium well
Place Smoked Tri-Tip on grill fat side down. Grill 2-3 minutes or until fat is bubbling. Flip.
Grill for additional 2-3 minutes. Slather fat side with Texas Pit Horseradish sauce. Flip.
Grill 1-2 minutes or until sauce is caramelized. Slather with sauce. Flip.
Grill 1-2 minutes or until sauce is caramelized.
Let rest for 30-45 minutes at 170°
*Letting the meat rest will lock in the juices
Slice the Tri-Tip against the grain in 1/8" strips
*If you slice with the grain, the meat will be chewy and not as tender
TEXAS PIT HORSERADISH SAUCE
2 cups Famous Dave's Texas Pit BBQ Sauce
1 tablespoon prepared Horseradish
½ cup honey
Put all ingredients in a mixing bowl
Blend well with wire whip
Day of Dance
Tango, two-step, tap or hip-hop – all are good for heart health and will be the beat of the day at the annual “Day of Dance” for heart health sponsored by Banner Health’s Spirit of Women program scheduled for Feb. 23 at two Valley retail locations.
Day of Dance encourages entire family participation and features simple ways to keep your heart healthy, dance demonstrations, free health screenings and fun and games for youth. Two events are scheduled from 11 a.m. to 2 p.m. – one at Superstition Springs Center (JC Penney Court) in Mesa and also at Arrowhead Towne Center in Glendale (Dicks Sporting Goods Court). The public is encouraged to attend these free, annual events. Superstition Springs is located at Power Road and the U.S. 60 and Arrowhead Towne Center is at Bell Road and the Loop 101.
Dance instructors from local studios will be on-hand to demonstrate various dance techniques and styles. Dance instruction will be provided by Verde Grove Stompers of Mesa, Rhythmic Expressions Arizona and by teachers from the Fuse Performing Arts Center.
Stages will be set-up for instruction and those attending will be challenged to participate and learn how dance can be incorporated into exercise routines to benefit heart health. Heart and health-related booths and information will be provided including health screenings, heart age tests, blood pressure checks and BMI analysis.
Day of Dance occurs all over the U.S. on Feb. 23 – February is American Heart Month – and is part of the national Spirit of Women campaign to promote healthy lifestyle choices through education and activities like dancing, movement and healthy eating.
According to the Center for Disease Control, more than 715,000 Americans suffer a heart attack each year and nearly 600,000 die from heart disease in the U.S. annually. Heart disease is the leading cause of death for both men and women. However, a healthy lifestyle – including dance – can help reduce the risk of heart disease.
City of Mesa will be hosting a Shred-A-Thon event from 8 a.m. to noon on Saturday, Feb. 23, 2013, at the Center Street Facility, 2412 N. Center St. There is no cost to take advantage of this event, but the following conditions apply:
· Five box limit on documents to be shredded per household (Max. box size: 12"x12"x18")
Residents are asked to clearly mark their boxes with the words 'To Be Shredded' so event staff can quickly unload their items. Due to anticipated volume, on-site shredding will not be available. Material will be secured at the collection site and transported to an off-site location at conclusion of event for destruction.
