Chicken Gremolata Brochettes

Chicken breast strips (slice single chicken breast into 4 strips)

 

Lightly brush with olive oil

Cook in skillet on medium high heat until cooked through and golden brown

Skewer

Gremolata Sauce
In a food processor, combine the following ingredients:
1 cup Italian parsley leaves
2 Tbsp. garlic
1 cup spinach
2 Tbsp. lemon juice
Salt and pepper to taste

Blend thoroughly to a paste

While continuing to mix, slowly drizzle in 1 cup olive oil
