Searsucker’s Bourbon Brown Butter Toast

Macerated berries (make ahead the night before)
2 cups mixed berries (any mix of strawberries, blackberries, raspberries and blueberries)
4 oz balsamic vinegar
1tsp sugar

Gently toss all ingredients together, cover and refrigerate overnight

Black pepper whipped cream
1/2 cup heavy whipping cream
1oz confectioner’s sugar
Crushed black pepper to taste

Whisk cream and sugar in electric mixer until stiff peaks form.  Fold in pepper to desired flavor profile.

Toast batter
Whisk together the following:

4 eggs
2 oz cream
1 tsp brown sugar
1 Tbsp Bourbon
1/4 tsp vanilla extract

Dip slices of brioche or Texas style bread into egg batter. Gently place in butter sauté pan at medium heat and cook until bread is golden brown and has a nice crust.  Place on plate and garnish with berries and black pepper whipped cream.
