Ingredients: Red Watermelon (1"cubes) 3 ounces Yellow Watermelon ( 1" cubes) 3 ounces Hami Melon (1" cubes) 3 ounces Pea Sprouts 0.5 cup White Balsamic Reduction 1 tsp Extra Virgin Olive Oil 0.5 tsp Avocado (sliced) 0.25 each Red Chili Gremolata 1 tbsp Whipped Goat Cheese 2 tbsp Procedures: 1. In large mixing bowl combine watermelon, hami, pea shoots, balsamic & oil-gently toss. 2. Spoon goat cheese in center of plate & drag corner to corner on square plate. 3. Spread salad evenly around entire plate, place sliced avocado in & around salad. 4. Evenly spoon red chili gremolata over salad.
