Roasted Tomatillo & Grilled Agave Pineapple Salsa

Combination of spicy & sweet

Salsa:

Roasted Tomatillo & Grilled Agave Pineapple Salsa

1 lb tomatillos husked
1 white onion, peeled, rough chop
4 cloves garlic
3 jalapenos
Grilled Pineapple (approx. 1 - 2 cups chopped)
Thai Chili Paste (to taste)
2 teaspoons ground cumin
Salt to taste (approx. 1.5 tsp.)
1/2 cup chopped cilantro leaves
1 lime juiced
Agave to taste

Roast 400

On a baking tray, roast tomatillos, onion, garlic and jalapenos (toss in olive oil) for approximately 15 minutes. Brush pineapple slices with olive oil & agave syrup, place on grill pan approximately 2 min. Transfer the roasted vegetables, any juices from the bottom of the tray to food processor. Add grilled pineapple, cumin, salt, cilantro, and lime juice and pulse mixture until well combined but still chunky (or smoother if you prefer).
