Peach Poblano Salsa

Peach Poblano Salsa  

3 cups Peaches, peeled and diced
2 cups Poblanos, roasted, peeled and diced
1/2 cup water
1 cup diced onion
1/4 cup olive oil
1/4 cup Vinegar
1 Tbsp Brown sugar
1/2 Tbsp Salt
1 tsp black pepper

Combine all ingredient and simmer for 15 minutes.

Pollo Asado marinade 
1 cup O.J.
1 cup Olive Oil
1 Tbsp Salt
1 tsp EACH Onion powder & Garlic powder
1 tsp black pepper
1 Tbsp Guajillo chiles
1 Tbsp Chipotle chiles
1 tsp Cumin
1 tsp Allspice
1 Tbsp honey


Puree all ingredients. 

This is enough for 2 whole chickens  cut into 4 or 8 pieces. 

Marinate for a minimum of 2 hours but up to 36 hours.
