“The Baxter Dog”

Ingredients:
6-All Beef Natural Casing Hot Dogs
1-Cup Tomatoes (Chopped)
½-Cup Chorizo
½ Cup –Onion (Chopped)
3-Cloves Garlic (chopped)
¼-Cup-Celery (Chopped)
2-Teaspoons Olive Oil
½-Cup Cooked Black Beans
2-Teaspoons Cumin
1-Teaspoons Crushed Red Chilies
½ Cup-Arizona Brewed Beer

Procedure: Sauté together, Olive Oil, Garlic, Onion, Celery, Chorizo, until soft, approximately 5 minutes or so, then add remaining ingredients and let simmer for 30 minutes.

Pepperoncini Chow Chow

Ingredients:
½-Cup Pepperoncinis (Chopped)
1-Dill Pickle (Finely Diced)
½ -cup Red Onion (finely Diced)
½ -Cup Tomato (Chopped)
2-Teaspons Olive Oil
1-Tablespoon Dijon Mustard
1-Tablespoon Cilantro (chopped)
1-Teaspoon Granulated Garlic

Procedure:
Combine all above, use as garnish on Baxter Dog

Extra Ingredients:  (For Garnish)
Can of Cheese Whiz
Crushed Red Tortilla Chips

Putting the Dog together: Poach Hot Dogs in water for approximately 5 minutes, then remove from water, place in saute pan with heated bacon liquor, brown on all sides, in a steamed hot dog bun, layer ingredients in the following manner, first the hot dog, then the chili, next the cheese, followed by the peppercini chow chow, and finish with crushed red tortillas.

Italian Sausage Burger

Ingredients:
1-Pound Pork
2-Teaspoons Granulated Garlic
1-Tablespoon Fennel Seeds
2-Teaspoons Crushed Red Pepper
Salt & Pepper to Taste

Procedure: Mix & Grill

BBQ Sauce-Dress Up

Ingredients:
3-Cups BBQ Sauce (Any Brand)
1-cup –Watermelon-Medium Size Cubed
½ Serrano Pepper-diced
2-Tablespoons Cilantro

Procedure: In a medium size pot, add ingredients, and let simmer for 15 minutes on stove

Ingredients:
½ Head Red Cabbage -Chopped
½ Head Green Cabbage-Chopped
2-Tablespoons Cilantro
2-Carrotts-Shredded
1-Cup Blue Cheese
2-Red Bell peppers-Cut Julianne Style
½ Cup Apple Cider Vinegar
¼ Cup Brown Sugar
